Chocolate Chip Cheese Bars

2 tubes (18 oz. each) refrigerated chocolate chip cookie dough

2 pkg. (8 oz. each) cream cheese, softened

1 cup sugar and 2 eggs

For crust, press one tube of dough onto bottom of greased pan. Mix cream cheese, sugar and eggs until smooth. Spread over crust. Crumble remaining tube of dough over top.

Bake at 350 degrees for 35-40 minutes, or until toothpick comes out clean.

Cool and cut into bars.

(My kids loved these and would not wait until they were cool before cutting them.)

There is probably another name for this, but we just call it “Dip”. This is good for any get together, such as baby or wedding showers, parties (all kinds), even at wedding receptions. No kidding! My son will call me and invite me for supper. “We’re having Dip”. Very easy and delicious!

1 lb. ground beef

1 lb. Velveeta cheese

1 jar salsa (I use mild)

1 can Rotel Tomatoes (mild also)

Brown ground beef and drain. While ground beef is browning, cut up cheese into cubes and put in crockpot. Add salsa and tomatoes. Add ground beef and cook on high until cheese is melted.

Serve with tortilla chips or scoops.

(I usually double this for a large crowd.)
