The 66th Stokes County Agricultural Fair is next week at the American Legion Fairgrounds on Tuesday, September 13-17, 2016. On Monday, September 12, exhibits will be accepted from 8:00 a.m. until 8:00 p.m. The Midway WILL NOT BE OPENED on Monday.
Cakes will be judged on Tuesday morning. If cakes not to be sold, participants may pick up their cake after 3 p.m. on Tuesday. Cakes will be auctioned to the highest bidder Tuesday night at 7 p.m. in front of the legion by Todd Gordon.
There will be a new competition, Fried Apple Pie Contest, sponsored by Smitty’s Apples (see page 67 in Fair Book for further information and rules.)
Bingo will be played each night from 5 to 9 p.m.
Gates and Midway will open at 4:00 p.m. on Tuesday. Student Day ($11.00 includes admission and riding all rides). The Jr. Goats and Sheep Shows and poultry judging will be at 5:00 p.m.

Helen is married to Bart Milleson, pastor with Trinity United Methodist in King. IMPOSSIBLE COCONUT CUSTARD PIE (makes it’s own crust!)
Ingredients 1/2 cup Bisquick 3/4 cup sugar 4 eggs 2 cup milk 1 (3 1/2 oz.) flaked coconut (1/2 cup) 1 tsp. vanilla 1 TBS. butter, softened
Directions Combine all ingredients and pour into 9 inch buttered pie pan. Bake at 400 degrees for 25-30 minutes until custard sets. Like magic it layers into crust, custard, coconut topping. Cool.
Chocolate fudge pecan pie
2/3 cup evaporated milk 1/2 (12-oz.) package semisweet chocolate morsels 2 tablespoons butter 1 cup sugar 2 tablespoons all-purpose flour 2 large eggs 2 teaspoons vanilla extract 3/4 teaspoon kosher salt 1 cup chopped pecans 1 (9-inch) frozen unbaked piecrust shell Ice cream
1. Preheat oven to 375°. Microwave first 3 ingredients in a large microwave-safe bowl at HIGH 1 to 1 1/2 minutes or until melted and smooth, whisking at 30-second intervals. 2. Whisk sugar and flour into chocolate mixture. Add eggs, 1 at a time, whisking just until blended after each addition. Whisk in vanilla and salt. Stir in pecans. Pour mixture into pie shell. 3. Bake at 375° for 35 to 40 minutes or until set. Cool 10 minutes before serving. Serve with ice cream.
Crock Pot Peach Cobbler
Ingredients ¾ cup uncooked old-fashioned oats ⅔ cup packed brown sugar ¾ cup granulated sugar ½ cup biscuit baking mix ¾ teaspoon ground cinnamon 5 fresh peaches, peeled and sliced* (Blanching them makes them much easier to peel)
Instructions Grease WELL the inside of 3 or 4-quart slow cooker. In a bowl, combine sugars, baking mix, oats and cinnamon. Stir in peaches and spoon into slow cooker. Cover and cook on low for 3 hours. Serve warm and top with vanilla ice cream!
Pasta Fagioli in the Crockpot~ just like Olive Garden
2 lbs ground beef 1 onion, chopped 3 carrots, chopped 4 stalks celery, chopped 2 (28 ounce) cans diced tomatoes, undrained 1 (16 ounce) can red kidney beans, drained 1 (16 ounce) can white kidney beans, drained 3 (10 ounce) cans beef stock 3 teaspoons oregano 2 teaspoons pepper 5 teaspoons parsley 1 teaspoon Tabasco sauce (optional) 1 (20 ounce) jar spaghetti sauce 8 ounces pasta
Directions: Brown beef in a skillet. Drain fat from beef and add to crock pot with everything except pasta. Cook on low 7-8 hours or high 4-5 hours. Add pasta the last 30 minutes. Serve with a nice crisp green salad and some garlic bread! Enjoy
